Sweet Potato Toast… Three Ways!

How to Make Sweet Potato Toast
1. Preheat oven to 350 degrees. Line a sheet tray with a cooling rack and set aside.
2. Using a sharp knife, slice a large sweet potato into 1/4 -inch slices. You should be able to get 6-7 slices, depending on the size of your sweet potato. Place sweet potato slices on a rack and spray each side of the slices with avocado oil spray. Bake for 10 minutes, flip, then bake for an additional 5-7 minutes, until sweet potatoes have started to soften, but not overcooked.
3. Remove sheet tray from oven and allow sweet potato slices to cool completely on rack. Place sweet potato toasts in an airtight container in the refrigerator until ready to use.
Strawberry Basil Sweet Potato Toast

Ingredients
- 1 sweet potato slice (see instructions above)
- 1 tablespoon goat cheese
- ½ cup strawberries, thinly sliced
- 2 tablespoon basil, thinly sliced
Instructions
Remove 1 sweet potato slice from airtight container and place in the toaster under the “Bread” setting (if applicable) and medium darkness and toast until toast is golden brown and slightly softened.
Once sweet potato toast is reheated, spread goat cheese on toast, then top with strawberries. Sprinkle with basil and enjoy right away.
Cinnamon Sweet Potato Toast

Ingredients:
- 1 sweet potato slice (see instructions above)
- 1 tablespoon almond butter
- 1/2 banana, peeled and sliced
- 1/4 teaspoon cinnamon
- 1/2 teaspoon honey
Instructions:
Remove 1 sweet potato slice from airtight container and place in the toaster under the “Bread” setting (if applicable) and medium darkness and toast until toast is golden brown and slightly softened.
Add almond butter, sliced banana, cinnamon, and raw honey to the sweet potato. Enjoy immediately.
Sweet Potato Avo Toast

Instructions:
- 1 sweet potato slice (see instructions above)
- 1 tablespoon grass-fed butter
- 1 egg
- 1/4 avocado
- 1 teaspoon lime juice
- 1/4 teaspoon sea salt
- 1/4 teaspoon black pepper
- pinch of red chili flakes
Instructions:
Remove 1 sweet potato slice from airtight container and place in the toaster under the “Bread” setting (if applicable) and medium darkness and toast until toast is golden brown and slightly softened.
In a large skillet, add butter over medium heat. Crack the egg into the skillet and cook until desired doneness.
In a small bowl, mash avocado and add lime juice.
Remove sweet potato from the toaster and transfer to a plate. Top with mashed avocado and egg, sprinkle with salt, pepper, and chili flakes.
