Citrus Smoked Salmon Salad
Is there a better pairing than citrus and smoked salmon? I think not. This zingy salad will prove it to you as grapefruit and cilantro dance together over thin strips of smoked salmon.

Ingredients:
- 1 avocado, sliced
- 2 tablespoons cilantro, finely chopped
- 2 tablespoons extra-virgin olive oil
- 2 cups arugula
- 2 tablespoons sunflower seeds
- 7 ounces wild-caught smoked salmon
- 1 pink grapefruit
Instructions:
- On a clean cutting board, zest the grapefruit and set aside. Using a sharp knife, remove the peel’s remains and cut the fruit into segments.
- Add arugula, cilantro, and oil to a large bowl and gently toss to combine. Arrange the grapefruit segments, avocado, and smoked salmon on top, then finish with sunflower seeds.
