Ingredients
- 2 cloves garlic, minved
- 1 lemon, juiced
- 1/4 cup and 2 tablespoons extra-virgin olive oil
- 1/2 teaspoon oregano
- 1/2 teaspoon sea salt
- 1/2 teaspoon black pepper
- 1 15-ounce cans garbanzo beans, drained and rinsed
- 1 red onion, diced
- 4 roma tomatoes, diced
- 1 English cucumber, diced
- 2 yellow bell peppers, diced
- 1 bunch parsley, diced
- 4 ounces organic feta cheese, crumbled, optional
Instructions
- Prepare the dressing by adding garlic, lemon, olive oil, oregano, salt, and pepper to a mason jar. Stir or shake to combine and set aside in the fridge.
- Add chickpeas, red onion, tomatoes, cucumber, bell peppers, parsley, and feta to a bowl.
