Healthier Candy: Paleo and Vegan Twix Bars

Ingredients:
- 2 tablespoons coconut sugar
- 1/2 cup almond butter
- 1 teaspoon vanilla extract
- 1/3 cup and 2 tablespoons pure maple syrup
- 2/3 cup coconut oil, melted, divided
- 2 tablespoons coconut oil, at room temperature
- 2/3 cup coconut flour
- 1/4 cup stevia-sweetened chocolate chips
Instructions:
1) Preheat the oven to 350ºF and lightly grease an 8×8” square pan with coconut oil.
2) In a large bowl, mix coconut flour and two tablespoons of maple syrup and stir until fully combined.
3) Add 1/3 cup coconut oil (solid or slightly softened) and use your hands to form a dough. Press the dough into the bottom of the prepared pan and smooth over.
4) Bake for 10 minutes or until golden brown around the edges. Set aside and let cool completely (you may want to pop it in the fridge while you make the caramel).
5) For the caramel, heat nut butter, remaining maple syrup, 1/3 cup coconut oil, vanilla extract, and salt in a medium saucepan until melted. Pour caramel over the cookie layer and put it back in the fridge.
6) For the chocolate topping, whisk together dark chocolate chips and 2 tablespoons coconut oil and pour over the cooled caramel layer.
7) Let cool in the fridge for 30 minutes, or until set. Slice into thin “twix” looking rectangles. Enjoy!
