Ingredients
Zucchini 4 zucchinis 1 tablespoon olive oil ¼ teaspoon salt Filling 2 tablespoons avocado or olive oil 1lb ground turkey, or ground beef 1/3 cup cilantro, finely chopped ½ sweet onion, finely chopped 2 garlic cloves, minced ½ teaspoon salt ½ teaspoon freshly ground black pepper 1 jalapeno, seeded and chopped 1 15-ounce can diced tomatoes 1 lime, zested and juiced Toppings Optional: ¼ cup goats cheese, crumbled 1 jalapeno, seeded and chopped ¼ cup cilantro, chopped
Instructions
Preheat oven to 375°F and line a baking tray with parchment paper.
Cut the zucchinis in half lengthways, scoop out insides and leave a ½-inch thick shell of zucchini. Brush the 1 tablespoon olive oil over the insides of the zucchini halves and sprinkle with salt. Place zucchini halves face-down on the tray and bake for 15 minutes until zucchinis have softened.
Remove zucchini from the oven. Place the zucchinis on a layer of paper towels to remove any residual moisture. Once drained, transfer them to a platter, cut side up.
Warm a large skillet over medium heat and add the oil, ground turkey or beef, cilantro, onions, jalapeño, garlic, salt, and pepper. Cook for 7 minutes until the meat starts to brown and the onions start to soften.
Add the diced tomatoes, lime zest and juice. Cook uncovered until a light sauce forms and the turkey is cooked through (approximately 6 minutes).
Fill each zucchini with the cilantro lime meat mixture. Distribute the goat cheese over the zucchini. Garnish with additional jalapeño (if using) and cilantro sprigs. Serve immediately.
