Ingredients:

  • 1 avocado, sliced
  • 2 tablespoons cilantro, finely chopped
  • 2 tablespoons extra-virgin olive oil
  • 2 cups arugula
  • 2 tablespoons sunflower seeds
  • 7 ounces wild-caught smoked salmon
  • 1 pink grapefruit

Instructions:

  1. On a clean cutting board, zest the grapefruit and set aside. Using a sharp knife, remove the peel’s remains and cut the fruit into segments.
  2. Add arugula, cilantro, and oil to a large bowl and gently toss to combine. Arrange the grapefruit segments, avocado, and smoked salmon on top, then finish with sunflower seeds.
