Whether you’re planning to pack up a bag and go picnic at the park… or just throw a blanket in the back yard… This Family Picnic Day recipe makes the perfect summertime meal for the whole family. It’s not only meaty and filling, but is packed with immune-boosting ingredients. This includes turkey, which fuels your immune cells with the amino acid, tryptophan. Avocado, to provide a healthy dose of the antioxidant, glutathione. And other immunity-boosters like cucumber, tomato, and romaine lettuce. Ingredients
Lettuce Wraps: 16 large romaine lettuce leaves 8 slices organic, nitrate-free turkey 4 slices organic, nitrate-free ham 4 slices organic cheese 1 cucumber, chopped into rounds 1 avocado, cut into slices 4 slices tomato 2 teaspoons Dijon mustard 2 tablespoons avocado oil mayo Dark Chocolate Almond Protein Bites: 1 scoop Metabolic Super Protein - Chocolate 1/4 tsp Salt 1 cup Almonds (raw) 1 tsp Vanilla Extract 1 tbsp Cocoa Powder 1 cup Dates (pitted)
Instructions
Start by preparing the lettuce wraps: Lay 4 lettuce leaves on a large square piece of parchment paper, slightly overlapping each other. Layer ¼ of all the fillings on the lettuce leaves. Roll the lettuce wrap tightly into a burrito shape by folding the top edge of the lettuce leaf down over the ingredients, then folding in the left side, and then the right. Roll the lettuce up, utilizing the parchment paper to guide you. Repeat 4 times until you have all the wraps.
Prepare the trail mix: In a medium bowl, cover the pitted dates with hot water. Let soak for 3 minutes to soften, then drain. Add the drained dates to a food processor and pulse until dates have broken down into a sticky, crumb-like consistency, 6-8 rounds of pulsing. Add the almonds and continue to pulse until they have broken into small pieces, an additional 6-8 rounds of pulsing. (It’s okay if you have a few larger pieces for almonds). Add the protein, cocoa powder, vanilla, and salt and continue to pulse until well combined. Using a 1 1/2-inch stainless steel scoop, form the mixture into a ball, then place in the palm of your hand. Make a fist, then roll into a smooth ball using the palms of your hand. Continue this process through the remaining batch, then pack them up in a container for your picnic.
Add any other sides of choice such as cut up vegetables with guacamole, cold cooked meats, cheese selection, olives, nuts and seeds
