Huevos Rancheros

Ingredients
Base 1 tablespoon olive oil, or avocado oil 3 cups cauliflower florets, chopped into small pieces 2 links chorizo, thinly sliced 2 cloves garlic, finely chopped ¼ cup chopped cilantro ½ teaspoon ground chili ½ teaspoon salt ¼ teaspoon ground cumin ¼ teaspoon black pepper 2 eggs Topping 1 avocado, thinly sliced ½ shallot, chopped 1 jalapeño, thinly sliced ¼ cup organic tomato salsa
Instructions
Place one tablespoon oil or butter in a large skillet over medium heat. Add chopped cauliflower, sausage, garlic, cilantro, salt, cumin, and pepper. Cook covered for 10-12 minutes, stirring occasionally until sausage is cooked through and cauliflower is tender.
In a separate skillet, add the remaining tablespoon oil or butter and place over medium heat. Crack the eggs into the skillet and cook for 5 minutes, or until whites are cooked through but yolks are still tender.
Divide the cauliflower and sausage mixture between two plates, top with eggs, avocado, shallot, jalapeno, and salsa. Serve immediately.
