Immunity Boosting Turmeric Soup

Homemade Cauliflower Falafel with Israeli Salad

Ingredients
1 tablespoon Olive Oil 2 chicken breasts, cut into bite-sized pieces 1/2 Yellow Onion (diced) 1/2 Red Onion (diced) 4 cups chicken broth 1 cup Kale Leaves (chopped) 2 cloves Garlic, Minced 2 tablespoons Parsley (minced) 1 tablespoon Turmeric 1 teaspoon Ginger (fresh, grated) 1/2 Lemon (juice only) 1/4 teaspoon Salt 1/4 teaspoon Pepper
Instructions
In a large Dutch Oven or saucepan, sauté chicken, diced onions and sweet potatoes in butter or oil until chicken is browned and cooked through to 165 degrees, approximately 8 minutes.
Add bone broth, kale, garlic, parsley, turmeric, ginger, lemon juice and seasonings to the pot. Bring the soup to a boil and then reduce to a simmer, uncovered, for 30 minutes.
Serve warm.
