Who can resist an adorable pink cupcake on Valentine’s Day? How about a cupcake that won’t derail your dietary success? Make these easy and healthy cupcakes from scratch and celebrate the metabolic way! These pink velvet cupcakes are colored entirely from organic beetroot powder and contain no refined sugars, dairy, or junk. They also happen to be absolutely delicious.

Ingredients

  • 1 cup gluten-free flour blend
  • 2 tablespoons cocoa powder
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • Pinch of sea salt
  • 1 ½ teaspoon organic beetroot powder
  • ¾ cup monk fruit sweetener
  • ½ cup coconut oil, melted
  • ½ cup unsweetened almond milk
  • 1 teaspoon apple cider vinegar
  • 1 egg (or flax egg)
  • 1 teaspoon vanilla extract
  • ¼ cup hot water

For the frosting:

  • 4 oz. Miyokos dairy-free cream cheese (or regular cream cheese)
  • ¼ cup dairy-free butter or coconut oil, softened
  • 1 teaspoon vanilla extract
  • 1 ½ cups powdered Swerve
  • 1 teaspoon organic beetroot powder
  • Optional topping: Good Dee’s brand sugar-free sprinkles

Instructions

Preheat oven to 350F and line a 12 well cupcake liner with silicone liners.

In a large bowl, add flour, cocoa powder, baking powder, baking soda, sea salt and beetroot powder. Mix to combine and set aside.

In a food processor, add coconut oil and monk fruit sweetener and whisk on high.

Meanwhile, in a small bowl, add almond milk and apple cider vinegar and stir to combine. Wait 2-3 minutes.

Add almond milk and vinegar mixture to the food processor, along with the egg, vanilla extract, and hot water. Mix to combine.

Divide the cake batter evenly between the 12 cupcake liners and bake in the hot oven for 15-18 minutes or until a toothpick comes out clean. Remove cakes from the oven and let cool completely.

Once the cakes have cooled, make the frosting. In a food mixer, add all frosting ingredients and whisk to combine.

Top each cupcake with frosting. Add optional Good Dee’s sprinkles and serve immediately.
