Steak Power Bowl
Servings: 4 Prep Time: 25 minutes Total Time: 40 minutes
Ingredients
1 tablespoon oregano 1 teaspoon ground coriander 1 teaspoon garlic powder ½ teaspoon salt ½ teaspoon black pepper 1/3 cup olive oil ¼ cup red wine vinegar 1 pound top sirloin steak 2 cups cauliflower rice, cooked 5 ounces sliced cucumbers ½ cup pitted kalamata olives 1 avocado, sliced 1 cup halved cherry tomatoes 4 ounces feta cheese, crumbled Optional toppings: Tzatziki
Instructions
In a small bowl, combine the oregano, coriander, garlic powder, salt, pepper, olive oil and red wine vinegar. Whisk to combine. Place the top sirloin in a reusable bag or dish and pour the marinade over the steak. Allow to marinade for 20 minutes-2 hours.
Preheat your grill to medium-high heat (400-450 degrees). Remove the steak from the bag and discard any leftover marinade. Once grill is hot, cook for 4-6 minutes per side, then remove from grill and cover with foil. Allow to rest for 10 minutes, then slice against the grain.
Divide cauliflower rice, cucumbers, olives, avocado, tomatoes and feta among 4 bowls. Top with sliced steak, as well as tzatziki, as desired.
