You might not think of tacos as a traditional “summer food”… but wait  until you swap out ground meat with delicious Mahi Mahi fish. This simple change will not only give you a tasty low-calorie dish, but will also deliver plenty of health benefits because of Mahi Mahi’s high amount of protein, vitamins and minerals. This includes selenium and potassium, which are both minerals that help the body to fight disease and support the immune system. Take one bite and you’ll be dreaming you’re sitting seaside listening to the waves crash on the beach. This dish is ready in 35 minutes!

Summer Taco Bowls

Servings: 4

Total Time: 35  minutes 

Ingredients  

1 head of cauliflower (cut into florets) 
2 tbsp olive or avocado oil (divided) 
1/3 cup cilantro (chopped, divided) 
1 lime (juiced, divided) 
2 tsp paprika 
Red Chili Pepper Flakes, to taste 
1 lb. cod or mahi mahi, cut into 4-ounce portions 
1/2 cup avocado oil mayo 
3 tomatoes (diced) 
1/4 cup red onion (diced) 
1 jalapeno pepper (diced) 
1/2 tsp salt 
1/4 tsp pepper 
1 avocado (cubed) 
4 cups cabbage, red 

Instructions  

In a food processor, pulse the cauliflower florets until they resemble small rice pieces.  

Heat 1 tablespoon oil over medium heat. Add the cauliflower rice and cook for 5 minutes. Add in 2 tablespoons cilantro and juice of half a lime. Remove from skillet and set aside. 
 
Add remaining oil to the skillet and turn up the heat to high. In a small bowl, mix 1 teaspoon paprika with salt and pepper and use to coat the fish. Add fish to the skillet and cook for 3-5 minutes on each side, or until flaky and cooked to 145 degrees. 
 
While the fish is cooking, add mayo and the remaining teaspoon paprika to a small bowl and whisk together until smooth. Set aside. 
 
In a separate bowl, add diced tomatoes, red onion, jalapeno, and the remaining lime juice. Stir to create a salsa. 
 
Assemble the bowls by adding cauliflower rice, cabbage, salsa, avocado, and tofu. Place a tablespoon of chipotle mayo on the side. 

Staple Subs

You can purchase frozen, pre-prepared cauliflower rice to sub for making it from scratch. Red cabbage can be replaced with green cabbage, or any salad leaves of choice.
