Traditional Irish Beef Stew

Ingredients:
- 2 tablespoons avocado oil
- 1 lb. organic and grass-fed beef stew meat
- 2 teaspoons sea salt
- 6 cloves garlic, minced
- 6 cups beef bone broth
- 2 tablespoons tomato paste
- 1 tablespoon fresh thyme
- 2 tablespoons coconut aminos
- 2 bay leaves
- 1 yellow onion, diced
- 4 large carrots, peeled and diced
- 2 lbs. potatoes (sweet or yellow)
- 1/2 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Instructions:
In a large Dutch oven over medium heat, warm 1 tablespoon avocado oil. Add beef stew meat and 1 teaspoon sea salt. Brown beef pieces on all sides.
Add garlic and sauté for 1 minute until fragrant.
Add bone broth, tomato paste, thyme, coconut aminos, and bay leaves. Stir to combine. Bring to a boil, then reduce to a simmer. Cover and cook for 1 hour on the lowest heat.
Add remaining avocado oil to a skillet over medium heat. Add onions and carrots and sauté for 10 minutes, or until onions are caramelizing.
When the beef stew has cooked for an hour, add cooked carrots and onions to the pot. Add potatoes to the pot and the remaining teaspoon of salt. Simmer, uncovered, for 30-40 minutes, or until potatoes are tender.
Serve immediately and top with black pepper and parsley.
